Anyone for these guilt-free pleasures???
Who doesn’t love popsicles in the summer? They’re cooling and refreshing, but they’re definitely a guilty pleasure….So I decided to make these guilt-free treats: Avocado Lime and Ginger Popsicles!
I absolutely love avocados, and I’m constantly trying to find delicious new ways to use it, and by pairing the zesty lime with the creamy avocado, zero fat Greek yogurt, along with the crunch of chia seeds and pistachios, it really makes it an indulgent yet refreshing and guilt free pleasure! I had some candied ginger sitting in my pantry and was unsure whether to add it or not to the mix, but eventually I did and I’m glad I added…as it gave a surprisingly wonderful subtle sharp sweet and chewy twist to the whole treat!
The backdrop in the frame is self-painted to capture these delicious goodies…I couldn’t find a perfect backdrop in my collection so thought of using my DIY skills to create one just for these beauties….

PREP TIME: 15 minutes
MAKE TIME: 5 minutes
ASSEMBLE TIME: 15 minutes
FREEZE TIME: 3-4 hours
2 large Hass avocados, diced (it was 300g after peeled and stoned)
300g Greek yogurt (I used zero % fat)
1/4 cup single cream/ low fat milk
2/3 cup honey
2 lime, zested and juiced
3 tbsp lime juice
25g candied ginger, very finely chopped
3 tsp black chia seeds
25g pistachio sliced
10 popsicle molds/ Kulfi molds
Popsicle sticks/ wooden skewers
Peel and dice the avocado. Drop avocado in the mixer jug, add Greek yogurt, cream, honey, lime juice and half lime zest . Blend them together until smooth and creamy.
Transfer into a pouring jug. Add candied ginger and remaining lime zest; stir with a spoon to mix.
In a small bowl, remove half cup avocado mix, add chia seeds and give it a quick mix.
Fill the molds just halfway with the avocado mixture, pour 2 teaspoons of chia avocado mix on top. Sprinkle 2 tsp of sliced pistachios over it and top with the remaining avocado mixture. Gently tap the popsicle molds on the kitchen counter to get rid of any air bubbles.
Freeze for 30 minutes, insert popsicle sticks or skewers and freeze upto 4-6 hours or until set completely.
Dip the molds in the warm water a few times and extract them out. Enjoy.
I used Hass avocados for this recipe as I find them very creamy and delicious in taste which are just perfect for these popsicles.If you can’t find Hass avocados, you may use another variety but make sure the are ripe and firm but neither squidgy nor hard as that will not give you the right taste and texture.
The Greek yogurt I used was from a brand called Fage Total which is quite thick in consistency but if the greek yogurt you are using is slightly loose in consistency then you might have to adjust the quantity of milk or cream I added to the recipe.
Replace the dairy yogurt with non-dairy greek yogurt and honey with maple syrup or carob fruit syrup to make it as a vegan option.
Candied ginger can be added bit more if you like strong flavor coming through your bites but if you aren’t a ginger fan, you may skip it completely. But I highly recommend to add ginger for that subtle sharp sweet flavors popping in your mouth.
