NO-BAKE GRANOLA BARS



Most easy to make deliciously healthy and chewy granola bars as it requires no baking. A perfect grab and go treat when you are in that crunch of time and have no time to sit and enjoy your meals. Or even a perfect mid-day snack for lunch boxes or in between those rush hours.


I make these often as my husband is an avid golfer and often needs that boost of energy in the midst of that perfect hole in one shot... I make these and store them in airtight containers. These last perfectly in an airtight container for up to a week. If you want to make bulk quantities they would freeze well wrapped perfectly. Wrap them individually in the baking paper and store them well in airtight containers or zip lock bags.

PREP TIME: 10 minutes

COOK TIME: 30 minutes

PASSIVE TIME: 1 hour

MAKES: 16



INGREDIENTS

  • 1/2 cup honey

  • 1/2 cup butter

  • 1 cup brown sugar

  • 2 tsp vanilla essence

  • 1 cup shredded coconut (unsweetened)

  • 2 1/2 cups rolled oats

  • 2 1/2 cups rice krispies

  • 3 cups of mixed nuts, seeds and dried fruits ( I used, almonds, walnuts, pumpkin seeds, sunflower seeds, apricots, golden and black raisins and flax seeds)


METHOD

  1. Line a 9 X 13 inch baking tin with parchment paper.

  2. Roughly chop almonds, walnuts and apricots.

  3. In a large heavy bottom wok or pan, add honey, sugar and butter together and let the sugar and butter melt and leave it to simmer for 5 minutes until it starts bubbling.

  4. Now drop in all the nuts and seeds, oats, rice krispies, coconut and vanilla. Mix and coat them well with the sugar butter mixture and keep stirring for 12- 15 minutes on low fire.

  5. Now drop it into the prepared pan and firmly press with the rubber spatula and leave it to cool completely. Cut into bars and store in airtight box.


COOK'S NOTES

  • It’s so versatile, you can add any nuts and fruits to make these bars if you are allergic to some nuts.

  • Dates and chocolate chips can be a welcome addition to these bars.

  • These can be stored up to a week in an airtight container or in the freezer for up to 3 months. Store them individually wrapped with parchment paper, cover them with aluminium foil and tuck it in a tightly closed lid box.

  • It’s a healthy snack which is a perfect choice to curb your hunger cravings and giving you the nutrition at the same time.
